Calcium Ascorbate is a calcium salt of ascorbic acid and a mineral ascorbate. It is a non-acidic and considered to be a more gentle form of Vitamin C. It is used as an antioxidant in solution, to prevent browning of fresh-cut fruits and vegetables.- Soluble in water
