Sodium ascorbate is a mineral salt of ascorbic acid. It is produced by adding sodium bicarbonate to ascorbic acid in solution. Mostly used as an antioxidant in meat applications and also for fortification. The DC grade is directly compressible and used by tablet manufacturers.
