The calcium salt of ascorbic acid and a mineral ascorbate. It is a non-acidic and considered to be a more gentle form of Vitamin C. Used as an antioxidant in solution to prevent browning of fresh cut fruits and vegetables. Also widely used as fortification in supplements.
