Anhydrous citric acid is the water-free form of citric acid. Widely used as an acidifier, flavouring and chelating agent. Because it is one of the stronger edible acids, the main use is as a flavouring agent and preservative in food and beverages, especially soft drinks and confectionary. It is also used in pharma and cosmetic applications such as creams, gels and liquids.
